This is one of my favourite summer salads. The saltiness of the cheese coupled with the sweetness of the watermelon is just dee-lish!
The amounts of each ingredient will depend on how many people you are serving. SO, i’ll leave it up to you!
Fetta (must be relatively firm so you can chop it into cubes)
Kalamatta Olives, pitted
Salt and Pepper
Make: Cut the watermelon into medium sized cubes (remove the seeds first if necessary) and then the fetta into smaller cubes. Take the desired amount of leaves you want to use off the stem of the basil. Slice the olives in half. Slice the red onion. Combine all the ingredients in a salad bowl of your choosing. Toss with olive oil, Salt and Pepper.
